for 40 pieces
220 gr icing sugar
120 gr almond flour
90 gr egg whites (room temperature)
20 gr sugar
Light up the oven fan-assited at 150°. Mix icing sugar and almond flour. Sift mixture and put aside. Beat the egg whites till stiff, add sugar and colour continue beating. Now by hand add half mixture to egg whites and mix from down to up with a palette knife so you don't deflate the composite. Add remaining part in the same mood. Put mixture in a pastry bag with a nuzzle n° 5 -7 and make little bottons of 2 cm diameter on a warm baking tray. Wait 2 minutes and put them in the oven for 12 minutes. Check them to don't cook too much. When they are baked take them out of the oven and wait 10 minutes before tear off.
